Usually, bosses can only be fought once, except for certain quest bosses and dungeon-exclusive bosses (not to be confused with the Labyrinth and floor bosses). In any case, the player that lands the Last Attack on the said boss will receive rare drops, while other players would most likely receive standard drops.
As for SAO and New ALO bosses, the field and floor bosses of Aincrad do not respawn.
